Tilapia Pad Thai
Instead of chicken, this Pad Thai features tender tilapia. This mild-flavoured fish absorb the balance of sweet, sour, and savoury sauce while providing a good source of lean protein.

Ingredients (serves 4)
400 g tilapia fillets, cut into bite-sized pieces
200 g rice noodles
2 eggs, lightly beaten
2 tbsp fish sauce
2 tbsp soy sauce
1 tbsp brown sugar
Juice of 1 lime
2 cloves garlic, minced
1 tbsp vegetable oil
100 g bean sprouts
2 spring onions, sliced
Crushed peanuts and lime wedges for topping
Preparation
Cook noodles according to instructions and set aside.
Mix fish sauce, soy sauce, sugar, and lime juice in a small bowl.
Heat oil in a wok or pan. Add garlic, then fish pieces. Stir-fry until lightly browned.
Push to one side, add eggs, and scramble.
Add noodles, sauce, and bean sprouts. Toss gently until combined.
Garnish with spring onions, peanuts, and lime wedges.
