Tilapia Pad Thai

Instead of chicken, this Pad Thai features tender tilapia. This mild-flavoured fish absorb the balance of sweet, sour, and savoury sauce while providing a good source of lean protein.

Ingredients (serves 4)

  • 400 g tilapia fillets, cut into bite-sized pieces

  • 200 g rice noodles

  • 2 eggs, lightly beaten

  • 2 tbsp fish sauce

  • 2 tbsp soy sauce

  • 1 tbsp brown sugar

  • Juice of 1 lime

  • 2 cloves garlic, minced

  • 1 tbsp vegetable oil

  • 100 g bean sprouts

  • 2 spring onions, sliced

  • Crushed peanuts and lime wedges for topping

Preparation

  1. Cook noodles according to instructions and set aside.

  2. Mix fish sauce, soy sauce, sugar, and lime juice in a small bowl.

  3. Heat oil in a wok or pan. Add garlic, then fish pieces. Stir-fry until lightly browned.

  4. Push to one side, add eggs, and scramble.

  5. Add noodles, sauce, and bean sprouts. Toss gently until combined.

  6. Garnish with spring onions, peanuts, and lime wedges.
